My family lost one of our cousins, on the Sexton side, last week. Here are a couple of great recipes to take to a family who’s lost a loved one, or someone who is homebound ... or just because. 

People love to be loved. It’s such a kind gesture to make something homemade and take it to a family in need. They appreciate the thoughtfulness and love. 

I have always been a sentimental soul. I miss the “Southern Way of Life.” I hope you have a great week.

1 1/2 to 2 pounds lean ground beef

1 tablespoon extra virgin olive oil

2 cans (14.5 ounces each) low sodium diced tomatoes

In a large skillet, heat olive oil over medium heat. Add the ground beef and onion and cook, stirring, until ground beef is no longer pink and onion is tender.

Add the garlic and continue cooking for 1 minute.

Add the chopped cabbage, tomatoes, tomato sauce, pepper, and salt. Bring to a boil. Cover and simmer for some 20 to 30 minutes, or until the cabbage is tender.

2 cans cream of chicken soup

1/2 cup  chopped onions ( I use frozen)

Melt stick of butter in large casserole dish.

Mix Rotel, chicken, soup, spaghetti sauce, Velveeta in large bowl.

Saute’ peppers and onions in half stick butter.

Pour in casserole dish and cook until cheese bubbles. About 30 minutes.
